Legal Standards
According to
prevention of Food Adulteration Act (PFA), 1976, malted milk food means the
product obtained by mixing whole milk or partially skimmed milk or milk powder
with malt extract and cereal grain flour in such a manner as to secure complete
hydrolysis of starchy material. It shall not contain added sugar, foreign-fat
and added colours and preservatives. It may contain cocoa powder. Malted milk
food shall be in the form of powder. It shall confirm to the following
standards:
Moisture - Not more
than 5.0 percent
Total ash - Not
more than 5.0 percent, on dry basis
Ash insoluble in
dilute HCl - Not more than 0.1 percent, on dry basis
Milk fat - Not less
than 7.0 percent, on dry basis
Nitrogen - Not less
than 2.0 per cent, on dry basis
Solubility percent
- Not less than 80.0 percent
Starch - If
dissolved in 5 ml of boiling water, cooled and treated with 0.5 ml of 0.05
percent iodine
solution in KI does
not develop any blue colour
Bacterial count -
Not more than 50,000 per g.
Coliform count -
Not more than 10 per g.
Provided that
nitrogen content shall not be less than 1.8 percent on dry basis if the malted milk food
contains cocoa.
ii.
BIS Standards (IS: 1806 – 1975):
The material shall
be of the following two types:
Type-1
: Malted milk foods containing no cocoa powder: As
per the definition given by Bureau of Indian Standards (BIS) malted milk foods
not containing cocoa powder (IS-1806-1975) means the material obtained by a
combination of whole milk, partially skimmed milk or milk powder, with the wort
separated from a mash of ground barely malt/any other malted cereal grain and
wheat flour or any other cereal flour or malt extract, with or without addition
of optional ingredients and without added sugar, in such a manner as to secure
complete hydrolysis of the starchy material and prepared in a powder or granule
or flake form by roller drying, spray drying, vacuum drying or any other
suitable process
Type-2
: Malted milk food containing cocoa powder : Malted milk foods containing
cocoa powder shall be same as Type-1 and will contain cocoa powder.
Optional
ingredients: In addition to ingredients mentioned the products may contain any
of the optional ingredients, singly or in combination as given below:
a) Flavouring
agents and spices (Those permitted under PFA Rules, 1955)
b) Emulsifying
agents (Those permitted under PFA Rules, 1955)
c) Eggs
d) Protein isolates
e) Sodium chloride
f) Sodium or
potassium bicarbonate, and
g) Minerals and
vitamins
Requirements:
Malted milk foods not
containing cocoa powder (Type-2) shall be in the form of powder or granules or
flakes. These shall be free from starch (except starch natural to cocoa powder)
and added non-milk fat. Malted milk foods shall be
free from preservatives and added colours.These shall be free from dirt and other extraneous matter.
Malted milk foods shall
also comply with the requirements given in Table .
