The freshly dried malted milk foods are highly hygroscopic, absorb moisture very rapidly and become moist, soft, sticky and unmanageable if handled and packed in ordinary atmosphere. Therefore, handling and packaging of malted milk foods must be done in an atmosphere of controlled low humidity. Further the finished product is packaged mostly in glass bottles with screw type metal lids or in other containers impervious to moisture vapours.
